OPTION 1
(1) Read page 79 entitled Nutrition in required book Complementary and Alternative Therapies (Fontaine, 2015).
“In Ayurveda, a balanced diet is different from the Western balanced diet deribed from the basic food groups of meat, dairy, fruit, grains, and vegetables” (pg. 79).
“The goal of diet management is to avoid aggragating any of the doshas and keep them calm and balanced” (pg. 81).
(2) Assignment: Eat a traditional Asian population meal. You may chose to either go to a restaurant of your choice and take (1) a picture of you holding the menu and (2) a picture of the meal -OR- you may chose to cook a traditional
meal from the selected population. Upload at least 2-3 pictures of the process of you cooking the meal. Potential +1-5 extra credit points (teacher discretion!) for cooking your own meal
(3) After uploading your picture, describe in a 300- 500 word response, describe Asian health beliefs regarding nutrition and your experience with the authentic cultural food. Then, in a 100-300 word answer, reply to at least 2 of your
peers regarding their experiences.
OPTION 2
(1) Read Complementary and Alternative Therapies (Fontaine, 2015) chapter 16 entitled Yoga.
“Homeopathic care encompasses a wide range of healthcare practices and is often referred to as “complementary medicine” or “alternative medicine.” Complementary, alternative, unconventional, or unorthodox therapies are medical practices
that do not conform to the scientific standards set by the allopathic medical community, they are not taught widely in the medical and nursing communities and are not generally available in the allopathic healthcare system, including the hospital
settings” (Spector 2017, pg. 89).
(2) Assignment: Attend a yoga class in your community or join in an online session (doyogawithme.com). Have a friend/colleague/etc take a picture of you doing a yoga pose. Only one (1) person for each pose (i.e. if a classmate has
already posted on a pose you may NOT post the same pose). +5 extra bonus points if you attend a live yoga class in your community and take a group picture with you holding a sign that includes your name, “Folk
Healing”, “University of Tulsa”, and the date.
(3) In a 300-500 word answer, describe the yoga experience including health benefits, history, and application to modern day medicine. Finally, comment/respond on two (2) of your peer’s postings in a 100-300 word response.

OPTION 3
(1) Read Yin and Yang (Cartwright, 2012) by following the link: http://www.ancient.eu/Yin_and_Yang!. Also, watch the TedTalk on the provided webpage. Reading from Fountaine: pages 22-24.
(2) Assignment: Construct an Ying and Yang inspired artwork piece (your choice of materials). This can be a drawing, model, painting, sculpture, etc. Take at least three (3) pictures of your progress of making your artwork piece with
the last one being you with your final piece.
(3) In a 300-500 word answer, discuss the history of Yin and Yang and application to modern day medicine. Finally, comment/respond on two (2) of your peer’s postings in a 100-300 word response.
OPTION 4
(1) Choose three (3) oils from the list in Box 8.2 on pages 143-144 in Fontaine. Post which three oils you have chosen; no more than one student can post about each oil. Duplicates posted will result in a deduction of 10 points per duplicated
oil.
(2) Assignment: Using your textbooks and other credible sources, research your three chosen oils.
(3) In a 300-500 word answer, compare and contrast your three chosen oils and cite your references. Include for each oil: plant origin (location), cultural history, benefits, common uses, and cautions. Include for all three oils: how they interact
together (good combination or should not be combined), as well as benefits and common uses when combined. Edit or reply to your post stating your three chosen oils to add this response. Do not create a new post. Finally, comment/respond
on two (2) of your peer’s postings in a 100-300 word response.
